The Colavita family was already a well-known name as one of the first olive oil brands in the US market since the early ‘80s. However, they realized they needed to expand their popularity and fully resonate as a local favorite. The company decided to make significant investments in the US market, leading to the most recent acquisition of O Olive Oil, an already well-regarded name among domestic consumers.
O Olive Oil takes pride in its artisanal collection of 100 percent Californian extra virgin olives and vinegar, handcrafted with real ingredients. The company aims to offer chefs and home cooks endless options for ethically bringing the fresh flavors of California to the table.
“We are currently taking initiatives to grow our market presence by identifying the right influencers and developing new and fresher PR strategies. This includes organizing press events to witness our distinct process and understand how we improve the quality of the oil we supply,” says Paolo Colavita, CEO of O Olive Oil.
The company’s Californian extra virgin olive oil is available in organic and premium lines. The organic line promises high quality and assures that every aspect of the supply chain is certified organic. On the other hand, the premium line maintains the same quality even without adhering to any specific organic protocols.
The finishing oils are other products that are made from fresh ingredients and are known for their distinct flavors. These oils are made from the last olives that are taken at the end of the harvest and crushed together with the fresh fruit (fresh basil, blood oranges, or Meyer lemons in the mill). This process results in oils with a distinctive flavor, smell, and long-lasting aroma. The company also offers infused oils like roasted garlic oil.
The company’s vinegar line consists of four key products—champagne vinegar, aged sherry vinegar, white balsamic & citrus champagne vinegar. These are its top-selling vinegars and the most popular in terms of sales.
It also offers a range of other vinegars that add depth to its product line and cater to different market segments. These include Cabernet Vinegar, Honey White Balsamic, Raspberry Wine Vinegar, Oak Aged Balsamic Vinegar that is aged in oak barrels for three years, Yuzu (a hybrid citrus fruit native to East Asia) Rice Wine Vinegar and Fig Balsamic (a Mediterranean delicacy.)

Its facilities are located in Dixon and are in close proximity to all the local partners allowing it to create a cluster of olive oil production. The company can get oil directly from the trees and orchards to the tanks within half a day, a distinct aspect of its operation that embodies the farm-to-table concept.
O Olive Oil is known for predominantly selling its products in retail sizes and is now planning to expand its offerings to the largest restaurant chains and distributors in the food service industry. Before its acquisition by Colavita, the company already had a strong presence with large retail distributors and B2B sales, including direct online sales to consumers. These existing channels have been maintained while also focusing on larger distribution networks. It is open to direct partnerships with manufacturers and is committed to selling through every possible channel.
O Olive Oil, with its product line, has successfully captured California’s rich culinary heritage by employing 100 percent real ingredients. The company, with its distinct offerings, continues to expand and reach larger distributors.
