High Tide and Low Tide Bar and Grill each offer their own distinct culinary experience. Low Tide Bar & Grill is our casual coastal dining concept, designed to be approachable and welcoming, while High Tide offers a more elevated dining experience that celebrates refined coastal cuisine. At the heart of our approach is a commitment to seasonality and showcasing the incredible ingredients our region has to offer through partnerships with local producers like fog line farms and dirty girl produce. Ultimately, our goal is to create memorable dining experiences that make La Bahia Hotel and Spa a true culinary destination on the Central Coast.

Leading by example is the most important lesson I’ve learned. In a fast-paced kitchen, clear communication and accountability are essential, and every team member plays an important role in delivering on our promise to guests. I believe success comes from emphasizing teamwork, creating an environment where everyone takes ownership of their responsibilities and supports one another.

Creativity thrives when everyone is involved, so I encourage collaboration and input from the entire team. At the same time, consistency comes from strong training and well-executed processes. When every team member understands the standards and takes pride in delivering them, we’re able to create experiences that are both memorable and reliably excellent.

For me, sourcing and seasonality begin with choosing ingredients at their peak freshness and quality. Those ingredients inspire the menu, allowing us to showcase what’s available at the right time of year. Deciding what earns a place on the menu is a thoughtful process that involves research, experimentation, tasting and refinement. It’s that attention to detail and willingness to keep improving that can elevate a restaurant from good to truly great.
